It's been months.
Everytime I try to update my blog, I get side tracked.
When I get a chance to really sit down and finish the drafts I have started with my travel blog, I will share with you what has kept me busy.
For now, here's a childhood favorite I made the other day that had my friends texting and messaging me for the recipes.
Here's the No-Fuss Old-Fashioned Filipino Bread Pudding recipe as promised.
7 cups day old bread, torn into pcs. or cubed (I prefer challah)
2 cans Evaporated Milk
2 eggs
1 egg yolk
1 stick salted butter, melted
1 cup cane sugar (adjust to taste)
1 tbsp. Pure Vanilla Extract
(optional)
1/2 tsp. cinnamon
1/2 cup raisins or
1/2 chopped walnuts, or cashews or almonds
Method:
Preheat oven to 350F degrees.
In a large bowl, mix all wet ingredients.
Add bread, let it soak for about 10 mins., or until soft.
Pour in a greased 9x9 or 8x8 pan.
Bake for 40-45 mins.
Remove from heat and allow to completely cool.
Note:
I like my bread pudding with a little less sugar so I just use 3/4 cup cane sugar.
The Old-Fashioned Filipino Bread pudding does not add cinnamon.
Photo does not show Raisins, for my kids are not too fond of raisins. And no nuts since we are a nut allergy home.
