My good friend Aimee and I with our daughter's had lunch at CPK.
I always ... always order the same thing from the restaurant.
Aimee ordered the White Corn Guacamole with chips.
And I tasted it, so now I have another addition to my very short list.
It was delicious!
So I thought, it was a perfect dip to serve at the Superbowl get together.
I couldn't find white corn, so I used sweet corn.
Well, let's just say,
the bowl was empty before the game was over.
Ingredients:
3 Sweet Corn
2 Hass Avocados, peeled, pitted and diced
1 1/2 Black Beans
1 Red Pepper, diced
1/2 cup Jicama, diced
1/4 cup Red Onion, finely diced
1 Jalapeno pepper, seeded, finely chopped
1 Serrano pepper, seeded, finely chopped
1 Lime, juiced
Handful of Cilantro, roughly chopped
Salt and Freshly Ground Pepper, to taste
Directions:
- Cut kernels off from the cobb.
- Combine all ingredients gently in a large bowl.
- Season to taste.
- Serve with your choice of tortilla chips.
Note:
- To avoid the avocados from turning brown, dice and add before adding lime juice.
