Lychees with Agar Agar

This week is crazy busy again.
Elections, my daughter's activities, driving, errands,
preparing and packing for a Moms Weekend with my friends.
I'm making sure everything is in order for my husband
 so he does not have to do much while I'm gone. 
Let me share with you an easy dessert my Mom
made that requires little time and can make ahead of time.
I'm not sure how many of you have heard of Lychees.
A Sweet, delicate, juicy and fragrant fruit.
Lychees are low in calories
and is rich in dietary fiber and Vitamin C, and is full of several anti-oxidants. 
It is in my list of favorite fruits.

2 cans Lychees in syrup
1 packet of Agar Agar Dessert Mix, see packet for cooking instruction.
  • Make Agar Agar Dessert Mix according to packet instructions.
  • Dice after it sets.
  • In a large serving bowl, Add lychees with syrup from one can. Drain syrup from the other can.
  • Add diced Agar Agar.
  • Cover with a plastic wrap, and chill for a couple of hours.
  • Transfer to Martini glasses or any dessert bowl.
  • Serve.
  • For Adults Only: Mix in 2 oz of vodka with the rest of the ingredients.
  • If you can find fresh lychees,  just use 1 canned lychees with the syrup, and substitute the other can with 1 1/2 cup of fresh lychees.

    1. I have never tried it with Buko, I might just have to do that next time.
