Back to School Healthy Lunch Ideas

Kids are back to school.
Quiet time for Mommy.
Yes!!!

But this means early rise, and late to bed for Mom too.
That I am not looking forward to.

My children take lunches to school.
I want to make sure that they eat a healthier meal
than what is offered in school.
There are a few days that I allow them to buy school lunch
 but you can
pretty much count that on one hand.

Here' s a few samples of what my kids have for lunch.

  1. Ham (ask for no nitrates), Provolone, and Lettuce on whole grain bread.
  2. Quesadilla with low-fat cheese and chicken breast.
  3. Whole Grain Pasta with Peas and Carrots topped with Parmesan Cheese.
  4. Fresh Mozzarella BLT (turkey bacon, no nitrates) with Pesto.
  5. Fried Brown Rice with eggs, peas and carrots. Yes, my kids take rice at school.
  6. My kids love taking what was Left-over from dinner too, especially soup.So make sure you get a thermal food container for each child.

For Snacks I pack,
  1. Low-fat Yogurt
  2. Baked Goldfish
  3. Fruits
  4. Low sodium/part-skim Mozzarella sticks
  5. Colorful Veggies with Ranch dip made from Greek yogurt
  6. Baked Snapea Crisps

And I usually make my kids homemade treats.
  1. Homemade Rice Krispy Treats
  2. White Chocolate Chunk & Cranberry Oatmeal Cookies
  3. Fruit Leather (not the rainbow colored ones, try making it if you can)
  4. Berry Parfaits (use Greek yogurt)

My kids only drink milk and water at school and at home.
They would occasionally have juice drinks or soda at parties and sleep-overs,
but that's the only time they have it.
My son actually prefers water over juice or soda anytime.

My kids love the popular brand name Spicy Cheese Crunch snacks,
they love the "O" cookies.
I let them have it as a treat once in a while.

It's not easy to feed picky eaters.
I know ... I have 2.
so everyday is a challenge and that's a challenge I am happy to face,
to keep my children healthy.
