Grilled Garlic Herb Shrimp

What's for dinner on No Meat Fridays during lent?

Here's a very easy recipe you can make in less than 30 minutes.
Grilled Garlic Shrimp,
and I'm serving it with Garlic Rice for dinner tonight.
It's perfect,
I have some leftover rice from last night's dinner.
And I have an abundance of garlic,
my husband bought a large bag full of garlic.
So, I need to use it before it goes bad.

For my single readers,
I am so sorry but this is not a date night recipe,
unless you provide your date with a toothbrush after dinner.
Hehehehe!

This can be serve as an appetizer as well.

Ingredients:

32 Shrimps
3 cloves garlic, minced
1 tsp dill, chopped or 1 tsp rosemary
2-3  tbsp olive oil
salt and freshly ground pepper to taste
8 4 inch Bamboo skewers, soaked in water for 1 hr

Directions:

  • In a bowl, mix together garlic, dill or rosemary, and olive oil.
  • Add shrimps,  coat shrimps with mixture well.
  • Season with salt and freshly ground pepper.
  • Cover with plastic wrap, let it marinate for an hour or 2 in the refrigerator.

  • After marinating, thread 4 pcs of shrimp in a bamboo skewer.
  • Heat grill, grill shrimps 2 minutes per side or until cook through.

  • Place shrimp on a plate, serve with garlic rice.
  • Garnish with a sprig of dill or rosemary.

Serves: 4 (2 skewers each person)

Note:

You can use either rosemary or dill with this recipe.
I usually serve a 1 tbsp soy sauce and 2 tbsp coconut vinegar dip with the shrimp. But you can also squeeze lemon over it
.
